- Spray a large, deep frying pan with oil. Heat over medium-high heat. Add onion and potato and cook for 10 minutes or until the potato begins to soften. Add garlic. Cook, stirring, for 1 minute or until fragrant. Add flour and stir to coat.
- Gradually add milk, stirring to combine. Add mustard and cheese. Stir until smooth. Bring to the boil. Add beans and vegetables. Return to the boil. Remove from heat. Spoon mixture among 4 x 2-cup capacity ovenproof bowls or ramekins. Scrunch each filo sheet and place on the top of each ramekin. Spray with oil. Bake for 20 minutes or until golden and the filling is bubbling. Serve.
