These pancakes are a healthy little breakfast perfect for a lazy Sunday morning or Saturday before sport! The blueberries provide a nice boost of energy absolutely packed with essential vitamins, antioxidants, and fibre. Simple and easy, give these pancakes a try for happy smiles all round!
Ingredients:
- 1 egg
- 2 tbsp coconut flour
- 1 cup oat flour
- Fresh blueberries
- 1 tbsp coconut oil (for frying)
Steps:
- Mix together all ingredients in food processor or with a whisk in a mixing bowl until smooth, then gently fold in the fresh blueberries.
- Heat the coconut oil in a frying pan.
- Take a large spoonful of batter and place onto the pan (smaller or larger depending on preference). Cook until bubbles form and the edges start to peel upwards before flipping over and making sure both sides are brown.
